EZ Chocolate Peanut Butter Eggs!

Yeah, it’s not about insurance, but folks have been asking how to make them, so here’s the recipe!

Get a 16-oz jar of peanut butter (I like crunchy Jif, but you can go either way for creamy or crunchy version) and a 13-16 oz can of cream cheese frosting (the pre-made kind for cakes)…mix them well.

Form little eggs and place them onto a cookie sheet/plate/whatever with waxed paper…FREEZE them. 

Melt chocolate buttons (double boiler method or microwave…if you microwave, do in small quantities so you can re-heat and keep it liquid for your dipping) and then dip the frozen eggs into the chocolate until nicely coated.  Dipping with a toothpick works pretty well.

I like DARK chocolate, but you can get the milk chocolate or white chocolate variety if you prefer.

Back into the freezer for a “flash freeze” and then after an hour or so, you can place them into containers for in the refrigerator.

These are fast and easy…but most important, DELISH!
